The spectrum and features of emerging food borne pathogens.

Mohamed Hatha M (India),
Dept. of Marine Biology, Microbiology and Biochemistry, School of Marine Sciences, Cochin University of Science and Technology, Cochin - Kerala

The spectrum of food borne pathogens are widening with our improvement in culture techniques and with the adoption of new technologies in food processing. The existence of large centralised food processing facilities where ingredients from different countries are mixed together is really making it difficult to track the source of food borne outbreaks. The increased movement of food, feed stuff and people also make delivery of pathogens on a global scale within short span of time. The misuse/ abuse of antibiotics in therapy and selection pressure offered by various animal production systems also add to the emergence of more and more drug resistant forms of pathogens into the food chain. The presentation reviews the spectrum and features of emerging food borne pathogens.
